As a result, we usually do a BBQ for his birthday party. What kid doesn\u2019t love a hot dog? I try to keep things simple, because I am running around like a chicken with my head cut off trying to make sure everything is perfect. I have a bit of an issue with things not going right, especially when it\u2019s up to me to make sure that they do. So, the last thing I have time to worry about is the meal. My husband does the grilling so that\u2019s covered.<\/p>\n<p>I can\u2019t just serve hamburgers and hot dogs though. I have to have something else to serve. Usually we go with a few pasta salads and a potato of some kind, just for a variation and to make sure that everyone gets filled up. Last year, I decided that I would try my Mom\u2019s cucumber salad recipe.<\/p><!--CusAds0-->\n<p>Her\u2019s was always good, but when I was going to make it, I couldn\u2019t remember what exactly went in to it. She was out of town on a conference for work, so I couldn\u2019t get in touch with her. It was by pure luck that I found this recipe on Spend With Pennies, and boy am I glad that I did!<\/p>\n<p>To Make this Recipe You\u2019ll Need the following ingredients:<\/p>\n<p>Ingredients:<\/p>\n<p>3 medium cucumbers, peeled and sliced 1\/4 inch thick<br \/>\n1 medium onion, sliced and separated into rings<br \/>\n3 medium tomatoes, cut into wedges<br \/>\n1\/2 cup vinegar<br \/>\n1\/4 cup sugar<br \/>\n1 cup water<br \/>\n2 teaspoons salt<br \/>\n1 teaspoon fresh coarse ground black pepper<br \/>\n1\/4 cup oil<br \/>\n1 teaspoon chopped fresh mint (optional)<\/p>\n<p>Directions:<\/p>\n<p>1. Combine all ingredients in a large bowl.<br \/>\n2. Toss well to mix.<br \/>\n3.
