Sweet Potato Casserole

Ingredients

3 c cold mashed sweet potatoes (yams out of can o.k. too)
1/2 c sugar
1/4 c milk
1 tsp vanilla
1/3 stick margarine, melted
2 eggs
TOPPING
1/2 c coconut
1/2 c chopped pecans
1/3 stick margarine, melted
1/3 c brown sugar, packed
1 Tbsp all-purpose flour

Directions

1. Mix sweet potatoes, sugar, milk, vanilla, melted margarine, and eggs together with an electric mixer. Grease a 9×9″ pan (glass o.k. too).
2. Mix topping ingredients (coconut, pecans, melted margarine, brown sugar, and flour) altogether.
3. Pour sweet potatoes into the greased baking dish.
4. Evenly sprinkle topping mixture over sweet potato mixture.
5. Bake at 300 degrees for 45 minutes uncovered.
