Crock Pot potato broccoli cheddar soup

Enjoy this homemade version of potato and cheddar broccoli soup. This Broccoli Cheddar Panera Soup will not only become one of your hearty soup recipes for chilly nights, but also one of your favorite easy healthy soup recipes! I have to admit I’m a mom looking for easy and healthy recipes, soups are 100% on my radar.

* INGREDIENTS :
° 2 tbsp. (30 ml) butter

° 1 chopped onion

° 1 garlic clove, minced

° 3 medium potatoes, peeled and diced

° 1 1/2 cups (375 mL) chicken broth

° 1/4 tsp. dried thym

° 1 1/2 cups milk

° 1 1/2 cups grated Canadian Cheddar cheese

° Salt and pepper to flavor

° 2 tbsp chopped fresh parsley

* PREPARATION :
Melt the butter in a large saucepan. Add onion and garlic. Cooking until tender, with coloring. Adding potatoes & mixing well. Stir in chicken broth also thyme. Bring to a boil. Reduce the heat. Cook gently, covered, 20 minutes, or until potatoes are tender.
Mash half the soup. Return to the pot. Stir in the milk and heat to the boiling point. Add cheese while stirring. Cook gently, stirring, until the cheese melts. Seasoning with salt also pepper to flavor . Garnish each serving with chopped parsley.
Microwave Preparation: In 12 cup (3 L) glass saucepan, cook onion, garlic and butter, uncovered, on high (100%) for 2 to 3 minutes. Adding potatoes, broth and seasoning. Cook, covered, 8 to 12 minutes on high power, until the potatoes are tender, stirring every 2 minutes. Mash half of the mixture. Return to the pot. Stir in milk and cook on high power, 2 to 4 minutes, until heated through. Stir in the cheese and cook for 1 minute on medium (50%) power, until it melts. Seasoning with salt & pepper to taste. Garnish with parsley.
