Ingredients:
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup unsalted butter, melted and cooled
1 cup strong brewed coffee, cooled
1 cup semisweet chocolate chips
1 cup chopped walnuts (optional)
Instructions:
Preheat oven to 350°F. Grease a 9×5 inch loaf pan and set aside.
In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
In a large bowl, beat the sugar, eggs, and vanilla extract until light and fluffy. Stir in the melted butter.
Gradually add the dry ingredients to the wet ingredients, alternating with the cooled coffee. Stir until just combined.
Fold in the chocolate chips and chopped walnuts, if using.
