Ingredients:
°16 open mushrooms of equal size, stems cut at level
°3 Tbsp olive or coconut oil
°1/4 c butter, soft
°3 cloves garlic
°2 tablespoons fresh thyme, chopped
°1/2 Tbsp lemon juice
°Salt and freshly ground black pepper to taste
°1/4 cup fresh breadcrumbs
Instructions:
Step 1: Preheat the oven to 200C/400F/gas mark 6. Lightly frying mushrooms, heading down, in hot oil for 20 seconds.
Step2: Place the mushrooms in a shallow pan with the stems facing up.
Step 3: Mix butter, garlic, thyme, lemon juice and seasoning. Pour a little garlic butter over each mushroom, then lightly press the breadcrumbs on top. Refrigerate for later use, or bake immediately for 10 minutes.
