Green Tea Infused French Delights
Ingredients:
100 grams almond flour
100 grams powdered sugar
75 grams egg whites
65 grams granulated sugar
2 grams cream of tartar
1 tablespoon matcha green tea powder
200 grams white chocolate, finely chopped
100 ml heavy cream
Directions:
Sift together almond flour, powdered sugar, and matcha powder in a bowl.
In a separate bowl, beat egg whites until foamy. Add cream of tartar and continue to beat until soft peaks form. Gradually add granulated sugar and beat until stiff peaks form.
Fold the almond flour mixture into the egg whites gently until well combined. Transfer the batter to a piping bag fitted with a round tip.
Pipe 1-inch rounds onto a baking sheet lined with parchment paper. Tap the sheet on the counter to release air bubbles.
Let the macarons sit at room temperature for 30 minutes to form a skin.
Preheat the oven to 300°F (150°C). Bake the macarons for 17-20 minutes. Allow to cool completely on the sheet.
For the filling, heat the cream until just boiling and pour over the white chocolate. Let sit for 1 minute, then stir until smooth. Chill until thickened.
Pair macarons of similar size, and pipe or spread the white chocolate ganache on one of the macaron shells. Sandwich with another shell.
