Lemon Cookies

These Lemon Cookies are soft, tangy, and perfect for a burst of citrus flavor in every bite. Enjoy them fresh out of the oven or as a sweet treat any time of day!

Ingredients:

– 1/2 cup unsalted butter, softened

– 1 cup granulated sugar

– 1 large egg

– 1 tablespoon lemon zest

– 2 tablespoons fresh lemon juice

– 1 1/2 cups all-purpose flour

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

– Powdered sugar (for dusting)

Instructions:

1. Preheat Oven:

– Preheat the oven to 350°F (175°C).

– Line a baking sheet with parchment paper.

2. Prepare the Dough:

– In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

– Beat in the egg, lemon zest, and lemon juice until well combined.

– In a separate bowl, whisk together the flour, baking powder, and salt.

– Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

3. Shape the Cookies:

– Scoop tablespoon-sized portions of dough and roll into balls.

– Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.

4. Bake:

– Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

– Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

5. Dust with Powdered Sugar:

– Once the cookies are completely cooled, dust them with powdered sugar.
