3 tablespoons olive oil
1 onion, finely diced
1 cup diced bell peppers (any color)
2 boneless, skinless chicken breasts, chopped into small pieces
1 packet taco seasoning
1 packet dry ranch seasoning
1 carton (32 oz) chicken broth
1 can (14.5 oz) fire roasted tomatoes, undrained
1 can (15 oz) pinto beans, drained and rinsed
1 cup frozen corn

One onion
Taco seasoning
4oz cream cheese
Diced tomatoes
In place of Rotel I used fresh salsa about 1/2 cup
Chicken broth
Salt & pepper
Cauliflower rice
Topped with taco cheese & sour cream!
