Chorizo sausage casserole

Ingredients
4 servings
1 lb spicy sausage or regular
1 (9 oz) package of chorizo
12 eggs
2 cups shredded cheddar or pepper jack divided
1 cup milk
2 cups frozen potatoes (not hashbrowns.too mushy
3 tbsp minced garlic
Salt and pepper to season

DIRECTIONS
Cook sausage and chorizo together. Add the minced garlic toward the end when meat is almost cooked.
While that is cooking beat your 12 eggs with one cup of milk and salt and pepper.
Add in 1 cup of shredded cheese and your potatoes and mix all together.
Drain your sausage/ chorizo mix. I used paper towels and did it twice. I did not want alot of grease.
Add the meat to the the egg mix and pour in 9×13 greased casserole dish. Add the remaining cup of cheese on top.
Bake at 350 for 40 to 55 minutes by checking the top to see if it starts to brown a little and you don’t see runny egg on top. It took mine 45 minutes. I set it on stove and let sit for atleast 10 minutes before serving.
You can add onions and peppers to yours.my boys will not eat so I did not add. Also can top with green onions but once again mine will not eat those! I love to top mine with sour cream.
