Ingredients:
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup brown sugar
2 large eggs
1 teaspoon vanilla extract
½ cup buttermilk
2 cups diced apples (peeled and cored)
½ cup chopped nuts
Caramel sauce for drizzling
Instructions:
1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
5. Gently fold in the diced apples and chopped nuts.
6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
7. Bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
9. Drizzle caramel sauce over the cooled muffins before serving.
