Soft Homemade Skillet Flatbread (Mini Pita Bread)

Ingredients:
2 ½ cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 tablespoon instant yeast
1 cup warm water
2 tablespoons olive oil
Extra flour for dusting
Instructions:
Prepare the Dough:
In a large bowl, mix flour, sugar, salt, and yeast. Add warm water and olive oil, then mix until a soft dough forms.
Knead the Dough:
Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
Let it Rise:
Place the dough in a lightly oiled bowl, cover, and let it rise for 1 hour or until doubled in size.
Shape the Bread:
Divide the dough into small balls. Flatten each ball into round discs (about 1 cm thick).
Rest Again:
Place the discs on a tray, cover, and let them rest for 15–20 minutes.
Cook the Flatbread:
Heat a pan or skillet over medium heat (no oil needed). Cook each piece for 2–3 minutes on each side until golden brown and slightly puffed.
Serve:
Serve warm. Perfect with cheese, butter, honey, or as sandwich bread.
Tip:

Keep the bread covered with a clean towel after cooking to keep it soft and fluffy.
