Savory Breakfast Egg Muffins

Ingredients:

6 large eggs

1/2 cup milk

1 cup all-purpose flour

1 tsp baking powder

1/2 cup grated cheese (cheddar or mozzarella)

1/2 cup diced ham or cooked chicken

1/4 cup chopped red bell pepper

1/4 cup chopped green herbs (parsley or chives)

Salt and black pepper to taste

Butter or oil for greasing

Instructions:

Preheat your oven to 180°C (350°F) and grease a muffin tin or line it with paper cups.

In a large bowl, whisk together the eggs and milk until smooth.

Add flour and baking powder, then mix well until you get a smooth batter.

Stir in the cheese, diced ham (or chicken), red pepper, and herbs.

Season with salt and black pepper to taste.

Pour the mixture evenly into the muffin cups, filling each about 3/4 full.

Bake for 20–25 minutes, or until the tops are golden and a toothpick inserted comes out clean.

Let them cool slightly, then remove from the tin and serve warm.

Tip: You can customize these muffins by adding vegetables like spinach, mushrooms, or onions.
