Ingredients:
For the base and crumble:
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 cup butter (softened)
1 egg
1 teaspoon vanilla extract
A pinch of salt
For the lemon filling:
1 can (400g) sweetened condensed milk
½ cup fresh lemon juice
1 tablespoon lemon zest
Instructions:
Preheat the oven to 180°C (350°F). Grease a baking dish.
Prepare the dough:
In a bowl, mix flour, sugar, baking powder, and salt.
Add butter, egg, and vanilla, then mix until a crumbly dough forms.
Make the base:
Press half of the dough evenly into the bottom of the baking dish.
Prepare the filling:
In another bowl, mix the condensed milk, lemon juice, and lemon zest until smooth and creamy.
Assemble:
Pour the lemon mixture over the base.
Sprinkle the remaining dough on top as a crumble layer.
Bake:
Bake for 25–30 minutes or until the top is lightly golden.
Cool and serve:
Let it cool completely, then cut into squares and serve.
